Cupcakes!
Vegan Cupcakes Take Over the World is pretty much the best cookbook ever.
Chai Latte cupcakes, decorated with stenciled Daleks because I AM A GIANT NERD:

The cupcake is made with black tea and chai spices. The tops are sprinkled with powdered sugar and a cinnamon/nutmeg mixture. I made these last week to celebrate Rose’s return and my final Doctor Who season four episode viewing with
jaydk.

These are super chocolatey. And made with beer! I used Sam Smith Oatmeal Stout. They’re like a crumb cake; the tops are sprinkled with chocolatey crumbs.

These are insane. The cupcakes are made with ripe banana and are very fluffy. Pineapple preserves and bits of chopped chocolate are swirled into the tops before they’re baked. Then they’re topped with big heaps of fluffy vegan buttercream frosting, then drizzled with chocolate ganache, then sprinkled with walnuts and colored candy sprinkles. You’re supposed to put a cherry on top but I didn’t have any so I used slices of banana. These were the hit of the party; the only two left are the ones pictured here.

I love that cookbook. I’m so addicted to the Mucho Margarita cupcakes that I’ve tried very few of the other recipes

My mom made those for my birthday last year! They are super yummy although I can’t eat too much as I have very little tolerance for tequila. I wonder if there’s a way to make mojito cupcakes….

Definitely in the top ten.
Okay, if not for Elizabeth David’s English Bread and Yeast Cookery I would definitely say it was the best baking book ever. I made vegan cupcakes from it for Eurovision.

Which brand/type of soy yogurt are you using? My cupcake baking experiments involving soy yogurt so far are not working as expected. :p
The soy milk/apple cider recipes are all working like a charm, yay!

I use WholeSoy; it’s definitely my favorite of the vegan yogurt options. It worked perfectly in the Chai Latte recipe; I haven’t tried it in any others yet.
Are you using “Vegan Cupcakes Take Over the World” or a different book? I wonder if the chemistry is different if you’re substituting soy yogurt for regular…

Yep, I’m using VCTOTW. I used the brand Wildwood soy yogurt, and made the Green Tea and Chai Latte cupcakes. Both recipes came out rubbery. :p I will give WholeSoy a try!

Hee, the cupcakes were a lot of fun. Especially the banana split ones, which were definitely the perfect party cupcakes. They got devoured.
